Cutting back-veggie crust pizza and semi homemade pizza sauce
So I love pizza, and it's something I haven't really thought about...but trust me I have loved it just as much as the next guy. I had occasionally thought about making it myself, but since cutting down on my breads I couldn't bring myself to do it. That is until I finally decided to tackle cauliflower crust. I had been putting it off for a solid 5 months because I thought it would be complicated and intimidating.
I started thinking about it more the last few weeks and finally buckled down to look up recipes. But during my thinking phase my thought actually switched to my love of broccoli and this delicius chicken and broccoli pizza that I'd had once. So I wondered if I could do a cauliflower and broccoli crust. The first things to come up were broccoli crust and it just looked so good that I decided to just go right to that instead of the cauliflower crust, which I actualy did try and bombed at...trying again this weekend. So this is my pizza crust made from broccoli...and broccoli crust sounds a bit...like people wouldn't want to try it so I'm calling it veggie crust.
All the recipes I read incorporated two kinds of cheese into the crust. I might try that with vegan cheese, but I'm on a low sodium diet, so that will be a special occasion.
You will need:
Grater or food processor
2-3 heads of broccoli. 2 heads makes 3 cups
2 eggs
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic powder divided
1 teaspoon onion powder divided
2 teaspoons oregano divided
2 teaspoons basil divded
or any italian seasonings
small can tomato sauce
preheat oven to 350
I grab a container or a large cutting board and set up my grater in the container or on the cutting board. Rinse the broccoli and grate on the large holes. I grate down the stem a little bit.
take 3 cups and put in a microwave safe bowl or steamer. put plastic wrap on bowl and steam for 2-3 minutes in microwave.
Wait for the broccoli to cool and then dump into a cloth and wring it out. Squeeze out as much of the water as you can.
Dump broccoli into bowl and combine with 2 eggs, salt, pepper, garlic powder (save rest for sauce), onion powder (save rest for sauce), oregano and basil (also save the rest for sauce).
Stir until well combined. You can get your hands dirty if you want.
Line a baking sheet or a pizza pan with parchment paper and bake for 20-25 minutes.
While that bakes I cook up some toppings. You can use whatever you like. Cut up some peppers or onions. I drizzle some olive infused with tomato, basil, garlic, and oregano into a pan and cup up some chicken breast and broccoli to cook. Then I put a lid on that and wait until I can hear and smell it, checking on it for the chicken to get a nice brown and the broccoli to wilt. Grate some sea salt on top. Once it's done I break the chicken apart into bite size pieces.
I make my sauce. So far I've made it with a very small can of tomato sauce with as low sodium as I can find. I pour about a 1/4 cup or so into a bowl and mix with the rest of the seasonings.
Take out the crust, and top with the sauce and toppings of your choice. And I sprinkle the pizza with some more basil and oregano.
Bake at least 15 minutes, It's a forgiving pizza, so no need to sprint to the oven when the timer goes off.
